Wash and cut your sweet potatoes into a large dice. 2. Start a large pot of water over high heat and bring to a boil. Add in the sweet potatoes and boil until they are easily pierced by a fork. Drain the water once they have finished cooking. 3. Wash your peppers and cut the pepper and onion into a small dice. 4. Add 1 Tbsp of olive oil to a skillet over medium high heat and brown the turkey. 5. Add 1 Tbsp of olive oil to a skillet over medium high heatAdd the onion, peppers, and 2 Tbsp of minced garlic to the skillet. Cook until the peppers have softened. 6. Mix in 2 Tbsp chili powder, 2 Tbsp cumin and salt and pepper to taste. Add in the sweet potatoes and mix. 7. Store the salsa in a smaller separate container. PLATING 8. This recipe makes 10 servings. Divide the meat and potato mixture evenly into each of your containers. Top each dish with shredded cheese, 1 Tbsp of green onions, and ¼ cup salsa.
