Ingredients: 6 roma tomatoes 1 3/4 cups of cherry tomatoes 1 red onion 1 1/2 garlic cloves 1/4 Walden farms creamer 1 cup of chicken bone or veggie broth Salt and pepper to taste 4 leaves of fresh basil 1/4 tsp crushed red pepper Directions: Begin the base of your tomato soup. To make this in the oven: Preheat your oven to 400 degrees F. In an oven safe dish, toss in your tomatoes, onion, garlic, non stick spray and salt and pepper. Roast for 30-40 minutes until everything is tender and the tomatoes are beginning to burst and char. Once your mixture is fully roasted, pour your tomato mixture in a high-speed blender (alternatively you can use an immersion blender). Squeeze out the roasted garlic in the blender and discard the skins. Blend with vegetable broth, or chicken bone broth along with Walden Farms creamer and basil leaves. Make sure to include all the liquid and tomato juices from the pan from roasting. Blend until smooth. Add salt and pepper to taste, drizzle with Walden Farms creamer & top with basil to serve.
