I’m turning a single $60 grocery list into your week of easy, healthy dinners ideas β€” this is recipe 2 of 5! πŸ›’πŸ’• as a recap, I post one recipe per day and each recipe serves 4 people! the grocery list is in the caption of the first video 😊 today’s ingredients: - 2 tbsp olive oil - 1/2 lb ground Italian sausage (sweet or spicy) β€” omit for a plant-based option & sub for another can of beans - 1/2 large yellow onion, diced - 1-2 large carrots, diced - 2 large celery sticks, diced - 1-2 tsp salt - 1/2 tsp black pepper - 1 tbsp garlic powder - 1 tbsp dried oregano - 1/2 tsp red pepper flakes - 15oz can navy or cannellini beans, drained & rinsed - 3 + 1/2 cups vegetable broth - 1 cup water - 4-5 packed cups kale, de-stemmed & finely chopped (about half a head of kale) - 13.5oz can full-fat coconut milk heat the oil over medium heat in a large pot, then add the ground sausage and brown all over. use a meat smasher or spoon to break it up into small pieces. once cooked, remove from the pot and set aside. in the same pot, add the diced onion, carrots, and celery. sautΓ© for about 10 mins, stirring occasionally, until the onions are translucent. season the vegetables with 1-2 tsp salt and the pepper, garlic, oregano, and red pepper flakes. mix to combine and sautΓ© for another 3-4 mins, stirring occasionally. add the beans to the pot along with the vegetable broth and water. stir, bring to a boil, and let simmer for 20 mins. stir in the chopped kale and can of coconut milk and bring the soup back to a simmer. season to taste. serve immediately for best results, or refrigerate in an airtight container for 2-3 days. freeze for up to a month. enjoy!! ❀️ #budgetshopping #groceriesonabudget #groceryshopping #groceryshop #groceryhaul #mealprep #mealprepping #mealprepideas #grocerylist #mealsonabudget #healthyonabudget #easyhealthyrecipes #wholefoods #soupseason #souprecipe
