Refreshing Mediterranean Farro Salad | Plant-Based, Healthy & Perfect for Meal Prep! [y9RARzTr5]
This is so refreshing! I’ve eaten it every day for lunch for the past 3 days 😁 🌱It is very simple to make too👇🏻 • Mediterranean farro salad • Ingredients 1 cup uncooked faro 1/2 red pepper chopped 1/2 cucumber peeled and chopped 1/4 cup chopped parsley 1/2 cup kalamata olives 1/2 cup chopped cherry tomatoes 1/3 cup vegan feta cheese Pinch salt and pepper 1 lemon lemon 2-3 Tbsp extra virgin olive oil Cook farro in veggie broth to package instructions. As it’s cooking, chop all veggies. Once farro is done, run under cool water to stop cooking process and cool farro before adding veggies. Mix in all ingredients. (Can add more cheese, salt, pepper, and olive oil as desired.) Store in fridge for up to 1 week.
