Add broccoli, red onion and garlic to oven tray. Lightly drizzle olive oil, season with herbs, salt and pepper to taste. 5. Cook for 30 minutes in oven. 6. Meanwhile, chop zucchini and add to large bowl. 7. In a blender, combine avocado, cashews, 1/2 cup water, salt and pepper to taste. 8. Once vegetables out of oven, add to bowl, add rocket and stir in dressing (which will be thick). 9.
