I create delicious recipes and I talk about allll thangs PCOS and women’s health💗 Here’s how to make this PCOS friendly Creamy White Chili 🌶️ * 1 Tbs olive oil * 1 lb chicken boneless/skinless thighs, chopped into cubes * 1 yellow onion, diced * 2 stalks celery, sliced * 2 carrots, sliced thinly * 1 yellow bell pepper, diced * 8 oz mushrooms, sliced * 5 cloves garlic, minced * Spices: 1 tsp cumin, 1/4 tsp salt, 1/4 tsp black pepper * 1, 4 oz can diced chilis * 3 c chicken stock * 2 cans great northern beans * 4 oz cream cheese * Cilantro DIRECTIONS 1. Mash 1 cup of the beans and set aside 2. Heat oil in a large soup pot, and add chicken over medium heat. Brown for 4-5 mins. Add onion, celery, carrots, bell pepper, mushrooms, garlic, and spices and cook another 3-4 mins until onion is translucent 3. Pour in chilis, chicken stock, and beans. Stir, cover, and turn down to a simmer and let cook another 8-10 mins. 4.
