Healthy Breakfast Cookies đŸȘ These one bowl gluten free and vegan breakfast cookies take just 10 minutes and they're so tasty with your morning coffee or as a snack throughout your day.  PLUS it's easy to use the ingredients you have on hand!  Of course you can have cookies for breakfast!! đŸ€Ș FULL RECIPE:  Ingredients  - 2 large (or 3 medium) Bananas  - 1/2 Cup Almond Butter (sub any nut/seed butter)  - 1/4 Cup Maple Syrup (or agave nectar)  - 2 Cups Rolled Oats (GF certified if needed)  - 1/2 Cup Pumpkin Seeds (or other seed)  - 1/2 Cup Chopped Dates (or other dried fruit)  - 1/4 Cup Chia Seeds (or other small seed, like hemp or flax)  - 1 tsp Cinnamon  - 1/4 tsp Sea Salt  Directions  - Preheat oven to 350F and line a baking sheet with parchment paper  - Peel then banana in a mixing bowl, then add almond butter and maple syrup and mix together  - Add remaining ingredients and stir until combined  - Using a cookie scoop or similar sized spoon, scoop cookies onto cookie sheet, then press down to flatten a bit  - Bake for about 25 minutes until golden brown!  Enjoy đŸ«¶ Follow me for more plant-based recipes and vegan health coaching tips!
