Tip: You could easily prepare the sauce ahead of time and store in the fridge to have a fresh, super-quick and unforgettable dinner. Ingredients Pork medallions (suggesting loin or fillet) for 4 people 2 teaspoons oil, divided 2 tbsp finely chopped red (or white) onion 1 clove garlic, finely chopped 115 grams crimini or mini bella mushrooms, roughly chopped (basically, a tub of brown mushrooms) 1 tsp dried thyme (or Herbes de Provence) 2 tbsp dry white wine or, if you prefer, chicken stock or pork stock 120ml cup (half of a small tub) of light cream cheese 1/2 tsp each of salt and black pepper 1-2 thinly sliced mushrooms for garnish Method Pre-heat the oven (180°C, fan 160°C, gas mark 4) Tenderise the meat by flattening it between two sheets of cling film with a rolling pin or the bottom of a pan to 1cm thickness before cooking. This will ensure consistency of cooking, without over cooking. Add a little oil to griddle or frying pan. Once the pan is hot add the pork medallions and sear for 3 minutes. Turn them over and then place them in a to bake for 6-8 minutes until the juices run clear. Whilst the pork medallions are in the oven, you can make the sauce. Pour the remaining teaspoon of oil into the frying pan and cook the onions until translucent. Add the garlic, chopped mushrooms and thyme or Herbes de Provence and cook over medium heat until the mushrooms have released most of their liquids. Once the mushrooms are cooked, add the white wine or stock and continue to cook until the liquid is mostly evaporated. Remove the sauce from heat and stir in the cream cheese until smooth, season with salt and pepper. After 6-8 minutes remove the pork medallions from the oven, check these are cooked and that the juices run clear. Briefly add the pork medallions back into the pan to coat with the sauce. Place the medallions on a plate and decorate using the reserved sliced mushrooms. Serve with mashed potatoes or rice, pouring the remaining sauce over the potatoes (or rice), and a nice green vegetable or a side salad.
