By our dear friend @clairehodginss HEALTHY, LOW CALORIE & HIGH PROTEIN MEDITERRANEAN CHICKEN BOWLS WITH HOMEMADE TZATZIKI 🍋🥬🍅🥒 One of my goals for 2024 is to meal prep lunch more! I find that in the middle of the day I just want something quick & easy, and having a healthy lunch ready to go is so helpful 🙌 🥗 Bowl ingredients (makes 2 servings) - 1 cup cooked quinoa or rice - 8 oz grilled chicken breast, diced - 2 cup arugula or spinach - 1/2 cup diced cherry tomatoes - 1/2 of a cucumber, sliced - 1/4 of a red onion, sliced - 2 tbsp crumbled feta cheese Arrange the quinoa, chicken, arugula, cherry tomatoes, cucumber, red onion and feta in two airtight containers. Store in the fridge for 3-4 days! 🥒 Tzatziki ingredients (makes 2 servings) - 1/2 cup plain greek yogurt - 1/4 cup peeled and grated cucumber - 1 tbsp lemon juice - 1 tsp minced garlic - 1 tsp dried dill - Salt + pepper to taste Add all tzatziki ingredients to a bowl and stir well to combine. Store in the fridge for up to 4 days. Add a scoop to the top of the bowl when you are ready to eat! Nutrition: 475 cal, 52g P, 53g C, 5g F
