I always get so excited for Fall since I consider it to be “soup season” my son has been loving the broccoli cheddar soup from Panera so I wanted to try to lighten it up and add more protein! I added cottage cheese + bone broth to this and it came out so good! You’ll need either a blender or immersion blender to get everything mixed together but other then that add everything to the pot and let it cook! Follow me, @tnstyled for more easy ideas! Ingredients 2 tablespoons butter 1 yellow onion, diced 2 large carrots, peeled and diced 2 stalks celery, diced 2 cloves garlic, minced 1/4 cup all-purpose flour 1/2 teaspoon smoked paprika 4 cups chicken bone broth 4 cups chopped broccoli 2 cups milk 1 cup cheddar cheese, shredded 1 cup cottage cheese Salt & pepper to taste Directions 1. Chop the veggies and melt butter in a large pot. Add the onion, carrot and celery and cook for 10 minutes, stirring frequently. 2. Add the garlic, paprika, and flour cost the veggies and cook for another minute. Add the broccoli and broth and bring to a simmer and cook for 10 minute. 3. Add the milk and cook over low heat until the soup is warm and then add in the cottage cheese (blend it in a food processor if you have time if not it melts down) and the cheese. Be careful not to turn the heat up too high or the milk will curdle. 4. Use an immersion blender to blend everything together or use a blender and blend in parts (2 cups at a time) enjoy! #soup #fallmeals #highproteinsoup fall meals, family, soup, broccoli cheddar soup
